The chaos of the festive season makes it a challenging time to eat well. Especially when you have kids, keeping them cool and their perennial hunger at bay can be demanding.
Ice creams, sweet slushies and icy poles are easy options, but these sugary treats have very few nutrients, are really high in energy, and can create very grumpy children when the sugar hit wears off.
Try some of these healthy options to keep your kids cool and satisfy their cravings for sweetness!
Pure fruit and yoghurt icy poles
- ¾ cup natural yoghurt
- 2 small bananas
- 2 teaspoons lemon juice
- Flesh of 1 mango or equivalent stone fruit or 1 cup of berries
- Slice the banana and mango into small chunks and combine with the lemon juice and yoghurt in a food processor.
- Blend until smooth, pour into an icy pole mould and freeze until solid.
This delicious recipe works just as well as a smoothie. Any variation of summer fruit will work well. Adjust amounts to taste.
One ingredient ice cream
All you need is banana!
- Peel 4 – 5 ripe bananas (they should be soft and have a few brown spots).
- Slice thickly into coins and put in a freezer bag or airtight container and freeze overnight or until solid.
- Blend the frozen banana pieces in a small food processor or powerful blender.
- Keep blending the bananas for a minute or two – at first they will appear crumbly, then mushy and eventually, once all the banana pieces smooth out, they will have a thick soft serve ice cream texture.
- Serve immediately or return to freezer in an airtight container.
You may also like a two ingredient mix of fresh lemon juice and one cup of frozen raspberries. Blend and serve as above.
Frozen grapes or berries
Why not take the kids berry picking and freeze whatever you can’t eat on the day. Serve frozen grapes and berries whole.
