All-Natural Christmas Pudding Recipe

Christmas and over-indulging often go hand in hand. Make sure you enjoy the festivities, but keep everything in moderation to stay on track with your health goals.

The holiday period is a time to treat yourself but watching what you eat will help avoid unwanted Christmas weight gain.

A favourite holiday treat is the good old Christmas pudding.  But to help you out, we’ve got an all-natural, gluten free recipe that makes 12 mini-puddings. They’re delicious and easy to make!

Baked Mini-Christmas Puddings

Makes 12 puddings
Preparation 20 mins
Cooking time 1 hour 15 mins

450g pitted dates
1 whole orange including skin, chopped 
1 ½ cups water
250g raisins
250g organic dried apricots, chopped
300g almond meal 
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground ginger
2 eggs, lightly beaten

1. Preheat oven to 180°C fan or 200°C. Grease 10 small dariole moulds, pudding moulds or ramekins.
2. Combine dates, orange and juice into a saucepan and bring to boil.
3. Simmer for 15-20 mins until all liquid has evaporated and dates and orange are soft. Set aside to cool.
4. Place date and orange mixture into a food processor and process until it is a paste.
5. Transfer to a large bowl. Add sultanas, apricots, almond meal, spices and eggs. Mix well.  You can add another egg if needed.
6. Divide between prepared moulds.
7. Place into a deep baking dish.
8. Pour enough hot water to come half-way up sides of the moulds.
9. Cover with a layer of baking paper and then foil, pressing around edges of the pan to completely seal.
10. Bake for 1 hour 15 mins.
11. Invert puddings onto serving plates.
12. Serve warm with your choice of custard and squashed raspberries.

If you want to add a festive touch to your puddings simply place a strawberry on top with a small amount of low-fat cream cheese around it – voilà – your little puddings now have Santa hats!
